Abstract

The purpose of this study was to explore Mexican immigrant perceptions regarding howdiet and physical activity have changed, the context of those changes, and the impact on health. Data were collected during individual and small group interviews with 21 Mexican immigrants. Thematic content analysis of transcribed audiotapes was conducted. The resulting model included an overarching theme of "change with trade-offs." Three aspects of diet changed: naturalness/freshness, abundance/variety, and meal patterns. Activity levels became much more sedentary. Both dietary and activity level changes as well as stress wereidentified inhibitors of health. The changes occurred within the context of work and the economy, family and connections, discrimination and immigration status, and altered natural rhythms. © 2012 Springer Publishing Company.
