Abstract

On the basis of a dietary behaviour assessment of 60 Italian immigrant women, a bilingual Italian-Canadian nutrition guide was developed and evaluated. The guide incorporated the concept of four food groups using Italian foods to illustrate each group. It also addressed problems documented by the initial assessment. These included overweight, neglect of dental health, use of nutrient-poor foods, lack of food variety and inappropriate food shopping practices. Pre-post responses of the subjects to seven multiple choice questions showed the positive impact of the guide, especially in the understanding of food labels, the causes of overweight and the appreciation of the need for nutritional guidance. A greater awareness of the nutritional effects of particular foods was shown by the significant change in perception of healthfulness of seven foods and in frequency of use of four of these foods. An appropriate tool was developed to assist Italian immigrant women in healthful dietary acculturation. © 1983 Pergamon Press Ltd.
